History
Ibiza has the oldest historical references regarding the production and trade of wine in the Balearic Islands. The wine activity began with the presence of the Carthaginians, who already in the 7th century B.C. they had established themselves on the island founding the colony of Ebusus.
Although wine has always been made in Ibiza, Antoni Costa was one of the first to see the potential of the island and decided to market the wine that the land of Ibiza produces. To do this, he learned how to combine traditional methods with new production techniques, training at the Institut Catalá de la Vinya i el vi (INCAVI), where he specialized in oenology.
Winery
We are a small family winery founded in 1995 where Antonio Costa began the adventure of reforming and expanding the winery, with the aim of offering high quality wines, always taking care of the entire production process, maintaining and reflecting the origin.
The winery is located in Sant Mateu d’Aubarca, a small town in the north of the island of Ibiza.
Like our vineyards, the winery facilities have undergone extensive expansion and modernization over the past few years.
The vineyards
Our own vineyards are located in the towns of Sant Mateu, Santa Gertrudis and Sant Agnés with a total of 7 hectares. These are characterized by being clayey, calcareous and fertile soils, in a Mediterranean climate with little rainfall.
Most of our crops are planted on trellises. Only a few follow the goblet planting technique.
We work the fields with the greatest possible respect for the surroundings and the environment, carrying out care, pruning and harvesting by hand, vine by vine.
The varieties we work with are:
– Reds Merlot, Syrah, Tempranillo and Monastrell.
– White we have Moscatel and Malvasia.
Of all of them, we highlight the Monastrell and the Malvasía “Grec” as the native varieties of the island of Ibiza.
The wines

White
White wine obtained from the Malvasia and Moscatel varieties from our vineyards, located in San Mateo and Santa Inés, harvested at the right moment of maturity.
Elaboration

Features
- Light yellow color, highlighting its luminosity and brilliance.
- Very aromatic and fruity with subtle notes of fruit (pineapple, citrus, pear).
- On the palate pleasant, soft and fruity.
- Ideal to accompany fish and shellfish.
Rosé
Rosé wine obtained from the Syrah and Tempranillo varieties, from our own vineyards, located in San Mateo and Santa Gertrudis, harvested at the right moment of maturity.

- Pale and bright red color.
- Aromas of red fruits (strawberry, blueberries).
- On the palate structured, balanced, long and persistent.
- It goes perfectly with appetizers, salads, rice and pasta.
Rosé
Rosé wine obtained from the Syrah and Tempranillo varieties, from our own vineyards, located in San Mateo and Santa Gertrudis, harvested at the right moment of maturity.

Tinto Barrica
Red wine obtained from the Tempranillo and Merlot varieties, from our vineyards, located in San Mateo, Santa Gertrudis and Santa Inés, harvested at the right moment of maturity.
Elaboration
Fermentation at controlled temperature in stainless steel tanks and cold stabilized.
Aged for 6 months in American and French oak barrels. Bottle aging, minimum 6 months.
Features
- Dark cherry red colour. Aroma of red fruits, vanilla and a roasted touch.
- Sweet, warm and smooth on the palate.
- Ideal to accompany cured cheeses, meats, pâté and sausages.
Tinto Tradición
In Ibiza, since time immemorial, wine has been made with a maceration of Thyme (Frigola), a highly aromatic wild plant with well-known toning and stomach properties. This practice, which has been passed down from father to son and has been maintained to this day, makes this wine very special.
Can Maymó produces this Tradition Red from a controlled fermentation between the grape and the Frigola, paying a well-deserved tribute to our traditions and customs.

Grec
White wine obtained from the Grec (Malvasia) variety from our vineyards, located in Santa Gertrudis and Santa Inés, harvested at the right moment of maturity.

The Can Maymó wineries are located in the north of the island of Ibiza, near the town of Sant Mateu d’Aubarca.
Visits

During the months of May to October we are open Monday, Wednesday and Friday from 10 a.m. to 1 p.m. for visits to the winery and tastings. - Groups:
